To farm Sunlight Medals through jolly cooperation, equip the Warrior of Sunlight covenant badge, use your White Sign Soapstone to place a gold sign, be summoned as a sunbro, and help your host defeat a boss to obtain a Medal. Kill that first knight there. Put on your souls and drops gear. You'll get about 6k souls per kill with a chance for a sunlight medal and an Ember. A great little farming spot. Bonfire --> kill knight --> bonfire --> repeat. Takes like 18 seconds. I like using big heavy weapon that can one-shot it.
